Founded by Kevin Ouzts in 2009, The Spotted Trotter in Atlanta focuses on humanely sourced proteins, sustainable ingredients, and crafting high-end, Southern-style charcuterie. Lomo, Spanish for tenderloin, is first wet brined in white wine and aromatics for about two weeks, then coated in pimentón and orange zest and dry-cured for up to two months. Pair this lomo with light wines, crisp beer, and creamy cheeses.
