These frilly, fist-sized, silvery clusters have a light woodsy aroma and pleasant, earthy flavor. Great sliced into chunks, sauteed and tossed in a wilted green salad, cooked in mixed mushroom ragout or roasted in clusters with olive oil, sliced garlic and pinch of crushed red pepper. The frilly tips turn pleasantly crunchy in a hot oven.
