In 2015, a new chapter for Maitake mushrooms began in London, Ontario with the arrival of Yoshinobu Odaira, the visionary founder of Yukiguni Maitake in Japan and a pioneer in large-scale Maitake cultivation. Driven by a passion to share the rare and highly prized Black Maitake with North America, Odaira brought his proprietary growing methods, designed to replicate the mushroom’s natural environment, and thus established Shogun Maitake Canada.
