A German apple from the early 1900's, thought to be an offspring of Cox's Orange Pippin. Holstein is a crisp, juicy apple with a citrus flavor and a sprightly balance of sugars and acids. Sometimes this apple will develop a flavor with a hint of pear. This variety tends to be a large apple with an orange-reddish skin that is good for eating and cooking. Holsteins blend deliciously with other apples in a pie or tart.
