Traveling and cooking around the world for the last several years, Chef Lior Lev Sercarz worked with some of the worlds best chefs including, most notably, spice master Olivier Roellinger. Lior uses the best spices from around the world to obtain fresh, aromatic, and powerful flavors in creating his own blends. Arabic for spices, baharat is a mixture used in Middle Eastern cooking. The recipe varies from blender to blender like with garam masala or berbere. Ours is based around allspice, cinnamon, and clove, and is a favorite of Mike Solomonov down at Zahav.
