Duck legs are first hand-rubbed with a proprietary blend of nine spices and flavorings. They're then layered with fresh aromatics and refrigerated for 36-48 hours. Once removed from the marinade, the legs are cooked in duck fat for 4-6 hours until the meat loosens from the bone but still intact. Warm in oven or skillet for five minutes before serving. Bella Bella ducks are raised in Sullivan County, NY, are cage-free, and roam in huge barns for most of their life.
