Originally developed in the Baltic region of Europe, Russian fingerlings are a wonderful, old-fashioned type of potato. These are large sized, waxy potatoes, with yellow skin and creamy yellow flesh. Fingerlings make a perfect potato salad and are also great halved and roasted. They have a rich, buttery flavor.
