A cross between a sour orange variety and a Palestinian sweet lime, Bergamot contains a lot of acidic juice and is prized for its pungent, high-oil rind which is used to make marmalades, dessert & sauces. The rind is a chief flavoring ingredient in Earl Grey tea. The juice has shades of Seville Oranges and grapefruit with a pale, golden hue.
