This miniature version of the traditional Manchego DOP ages more quickly in the smaller 2 lb. format. Mini Manchego is made from milk taken from a herd of Manchega shee grazing in the La Mancha region of central Spain. It is nutty, sweet and tangy, delicous served solo as in Spain, or coupled with crusty bread and olives, wine, fresh fruit, roasted peppers or quince paste. As it ages it becomes saltier and firmer, better for grating.
