Cultivated in clusters on hardwood beech trees, Honshemeji are button sized, little bell-shaped mushrooms with long, thin, edible stems that stay slightly crunchy and juicy even when cooked. Very delicate with nutty, herbaceous flavor. Not for serving raw as they will be too bitter. Best to simmer in soups or stir-fry.
