European sunchokes, predominately grown in France, are considerably sweeter than conventional sunchokes with a rounder, nuttier flavor and pinkish flesh. Their shape is much smoother without the pesky knobs that notoriously make cleaning and cooking sunchokes such a chore. Handle sunchokes carefully as they easily bruise.
