About Four Fat Fowl

Four Fat Fowl is a family of cheese-lovers with a commitment to making locally-sourced, handmade cheeses of the finest quality. They carefully craft St. Stephen cheese in their newly renovated facility that showcases the Hudson Valley's bounty - specifically the bounty of Stephentown, a small town in Rensselaer County, NY. This area has a rich history going back to the colonial era.

St. Stephen is a beautiful triple cream pillow bursting with buttery and milky overtones. The smooth, silky interior is made from all natural jersey cow’s milk and fresh jersey cream. The soft, bloomy rind adds an earthy flavor with nutty undertones. When warmed to room temperature, St. Stephen has the color and texture of a freshly whipped butter cream frosting with a fluffy white rind wrapper. The melting paste is intensely buttery and tangy – even a little sour - with mushroom-y and grassy finishing notes.
