Bluefoots are lovely lavender-hued beauties that are mild, clean and firm with low water content. They are often cooked together with other mushrooms to add body and substance because they don't wilt down as much. Bluefoots are delicious simply cooked in olive oil with a little butter and also take well to roasting.
