This type of persimmon grown in Israel does not have to be soft to be enjoyed. Unlike Hachiya persimmons, which must be almost mushy to be sweet, Sharon fruits are sweet even when they feel firm. They have none of the astringency of the Hachiya and can be sliced into neat wedges for salads and cheese plates.
