Kennebec-style white chef's potatoes that are grown specifically for use in chips and french fries. They are preferred over russets for frying as they have a thin skin that absorbs less oil while cooking. Chipperbecs are non-GMO and naturally lower in sugar and higher in starch. When fried, they absorb less oil than other varieties.
