Renewed Italian specialty, originating from Emilia-Romagna region. Coppa is a noble pork cut, i.e. Boston butt; it is dry-salted following the original production method, seasoned with salt, garlic and a secret blend of spices, then air-dried for 3 months. Coppa should be sliced parchment thin to enhance its rich marbling and pleasant texture. Preferably accompanied by medium body red wines, dried fruits and cheeses for a perfect starter.
