These New Cauliflower Kits Are a Total Life-Saver

The transformation that finally got me on board with cauliflower was “rice.” You see, now that I’m in my mid-30s, I’ve learned that some food bites back — and for me, it’s recently been rice (I don’t need to bore you with tales of indigestion). I am a member of a Caribbean-American family, so not being able to eat rice for dinner? A cruel joke. So, cauliflower! I recently tried the cauliflower rice kits from Urban Roots and they totally blew me (and family) away.

Here’s What You Need to Know About the Kits

You can buy many different kinds of cauliflower rice from the grocery store (see our whole review of freezer-aisle faves), but there are not a ton that come fresh and with all the ingredients you actually need to make a dish. All you need to prepare the cauliflower rice kits from Urban Roots is one pot or bowl. They take as little as five minutes to make and cost between $6.99 and $7.99.

There are four different kits to try in the line: Chili Cilantro, Broccoli Fried with a tasty sesame sauce, Moroccan Spiced (the most interesting one, IMHO), and Tabouli Style Cauliflower Rice. I had an opportunity to try the first three with my family (rice experts), and here’s what we had to say.

Chili Cilantro

First we started with Chili Cilantro, “a spicy blend of corn, pumpkin seeds, cilantro, cauliflower rice, and salsa verde,” according to the package, and it was … um, very spicy. Like the kind of spicy that seems slightly unnecessary. My Haitian parents love spice, and it was even too much for them.

The preparation of the kit was easy, however. It took about six minutes from start to finish. The only manual labor I had to do for this one was chop a bit of cilantro and reduce a sauce slightly, but basically all you do is heat a pan with oil and add all the ingredients one by one. Easy.

Broccoli Fried

The next flavor I tried was the Broccoli Fried Cauliflower Rice. This is a classic side dish to me. I would definitely bring it to a dinner party. The kit consists of a blend of broccoli, scallions, a sesame-tamari sauce, and cauliflower rice (duh). The sauce totally makes this kit, and we ate the entire thing.

Moroccan Spiced

The Moroccan Spiced Cauliflower Rice kit was the most intriguing to me of all the kits because of its unique flavor profile. The kit only takes five minutes to make. Soon enough the sweetness of the carrots and cinnamon blended with the cauliflower and cumin were wafting into my doubting nostrils.

Verdict? Yum.

Tabouli Style

This kit was the only one that made me feel like I was eating rice and not cauliflower instead. The kit is made out of cauliflower (again, duh), tomatoes, cucumbers, parsley, and fresh-squeezed lemon juice — simple, easy, super-flavorful. My family ate the entire thing, and we’re going to regularly add this into our dinner rotation.
