Clarified butter is butter absent of water and milk solid, making it 99.9% pure butter fat. With the absence of water, this product is shelfstable and does not need refrigeration. Ideal for sautéing since it does not burn as easily as ordinary butter. Clarified butter is an excellent choice for sauces, such as Hollandaise and Béarnaise, as well as a great side for lobster and crab.
