Dark grey-to-black horn-shaped mushrooms with delicate, frilly edges and a strong perfume. Black Trumpets are related to chanterelles but are more fragile. Their surprisingly deep, earthy, smoky flavor and meaty texture develops because BlackTrumpets grow in the wild and cannot be cultivated. All parts of Black Trumpets are usable including the stems. They are relatively clean to start with but should be gently swished in cold water to remove foreign debris from the hollow stems. They're delicious in cream sauces, tossed with pasta or into risotto and served with veal or pork chops. Add a dash of soy sauce when cooking Black Trumpets to push the umami into the stratosphere.
