BirbaBlu is a rustic Italian blue with a hoppy, fruity profile. The Rosso family crafts this special cheese by first soaking it in blonde ale and then covering each wheel with malted wheat to bring forth a lightly fermented essence. Salty and buttery, this beer-forward cheese has notes of cooked caramel and a zesty finish. This cheese is lovely with jams both sweet and slightly spicy, fresh fruit, charcuterie, and buttery chocolates.
