Small green, ridged pods with subtle flavors suggesting eggplant, artichoke and asparagus that originated in Africa. Okra contains a sticky liquid that releases when cooked in any manner which helps thicken the liquid it's cooked in. Usually a star gumbo ingredient, okra is also popular deep fried and frequently cooked into casseroles, soups and stews.
