The famous vapor-cooked ham of Italy, Gran Biscotto is made from the same specially selected hog legs used for Parma prosciutto. The meat is dry aged for 24-48 hours then vapor steamed in its own juices until perfectly tender. Gran Biscotto has no MSG or polyphosphates and contains reduced amounts of sodium. The subtle flavorings of cinnamon, cloves and cracked pepper heighten the sweetness of the ham without masking or overwhelming it. Sliced paper thin, it makes the most delicious panino imaginable. It is also excellent served rolled up as antipasti with cheese and olives or shredded over pizza and pasta.
