Dulse is a red seaweed found naturally in the cold waters of the North Pacific and Atlantic oceans. Collected for centuries by local people as a source of protein and nutrients, dulse has the leafy feel and texture of parsley/cilantro, with a rich umami flavor. Never slimy or fishy, dulse can be plated directly out of the bag as a crisp briny sea vegetable or briefly rinsed in freshwater for a less saline flavor. Dulse can be served fresh, blanched, dried, powdered, or even fried, which results in a crispy bacon-like flavor.
