Café Select has been a NYC fixture since 2008, known for its world-class Swiss cuisine. For their signature sausage, founder Oliver Stumm asked Schaller and Weber to recreate Switzerlands famous St. Galler Bratwurst. A fine mixture of pork and veal is blended with milk, lemon zest, a hint of mace, nutmeg, and cardamom to create an incredibly delicate, mildly spiced sausage.
