Bartletts are the most widely grown pear in the world and commercially grown in the U.S. in California and the Pacific northwest. They are early season pears, best in late summer or early fall when their sweet, musky juice is most pronounced. They start out green off the tree and ripen to bright yellow on the counter. Don't wait for Bartletts to soften - they ripen from the inside out so should be eaten while still slightly firm. They're the ultimate dessert pear and great with cheese.
