Hedgehogs are wonderful, sweet, wild mushrooms that can be used like chanterelles. Ranging from beige to pale orange in color, they have a dense, meaty texture and a fruity flavor like chanterelles, though not as intense. Hedgehogs are best sauteed, braised or roasted and added to soups and risotto, heaped on steak or tucked into omelets.
