Not much you can do with Sour Sevilles except make a deliciously tart orange marmalade. Wash well, remove core, squeeze out juice into pot and wrap seeds in cheesecloth to submerge in the pot (they add much needed pectin to thicken pulp). Slice rind thinly and add to pot. Cover with water, add little lemon juice and sugar or agave. Cook according to any of the recipes that abound online. The result is plenty of sunny, tropical scents perfuming the kitchen and a marmalade that lasts about 6 months.
