From the Venetian terroir in Italy comes this stunning rosette of radicchio - deep magenta leaves grown in the shape of a rose bud. They are very silky and tender with slightly bitter overtones - though not as bitter tasting as their dark color might suggest. Flatten out a whole rosette and nestle a scoop of grain, poultry or seafood salad inside the splayed crimson frame. Or gently separate leaves and add as bold red shards in a tossed green salad.
