Here is a liberated version of Burrata - Stracciatella is the lush, loose mixture of mozzarella curd and fresh cream without the layer of pasta filata (a mozzarella sack) enclosing it as in Burrata. The cool, milky mass is so soft and silky you must scoop it out with a spoon. Enjoy within a day or two at most.
